    Food Deflation and The Ultimate Cookie Recipe

    For some reason, my inner Martha Stewart came out this weekend and I rushed to the grocery store to get ingredients for…

    THE ULTIMATE COOKIE.

    This is a recipe a trainer gave me at Bally’s Scandinavian in Cleveland (yes, I belonged in the ’90’s).  It involves eggs, butter, oats, etc.  I’m not Miss Domestic or anything but I do know that one year ago, every single ingredient except *maybe* the baking soda was MORE expensive.  Today, food prices have come down, particularly for eggs.

    Back in March, Egg Industry (yes, there’s a group by that name)  predicted egg prices would start falling.  Milk, eggs and some meats had gotten prohibitively expensive.  Indeed, the reversal came during springtime and has calmly moderated since then. The ‘run on rice’ where people were actually rushing to Costco and hoarding bags of it is but a distant memory.

    The good news is that during this Post-Recession era, people are relieved to find at least *some* things are getting cheaper.  Unlike tuition and healthcare, food is one of those things. 

    This is a roundabout way of telling you that it cost me way less to make these cookies today than it did last year.

    The Ultimate Cookie

    Preheat oven to 350 degrees.  Then, using a hand mixer, mix all in one big bowl:

    1 cup butter (salted)

    2 cups brown sugar

    2 eggs

    2 teaspoons vanilla extract

    2 1/4 cups flour (I use whole wheat flour)

    1 teaspoon salt

    1 teaspoon baking soda

    2 cups oats (I use Quaker)

    6 oz mini chocolate chips

    Bake for 8-10 minutes (or until done)

    Delish!
